Using wedding gifts!

On Monday evening - I was feeling adventurous...I wanted to cook. 

I took a new recipe I can't take credit for... one of my new favorite blogs - The Pioneer Woman - had a recipe for Mini Meatball Sandwiches! 

I have never made a meatball in my life - until Monday... man were they DELICIOUS! Here is the recipe below - it was by far one of the easiest meals I have ever made... quick, simple, not a lot of ingredients and very FILLING! 
         
  1 pound  Ground Beef
            ½ cups  Bread Crumbs
            1 clove Garlic, Minced
            ½ teaspoons Salt
            Freshly Ground Black Pepper
            ½ cups Milk
            2 Tablespoons Olive Oil
            ½ whole Medium Onion, Diced
            1 jar (large) Marinara Sauce
            12 whole Dinner Rolls (or Slider Rolls)
          Provolone Cheese

Preparation Instructions
* Mix meat with bread crumbs, garlic, salt, pepper, and milk. Knead together with hands. Roll into heaping tablespoon-sized rolls.
* Heat olive oil in a large skillet over medium heat. Add onions and cook for one minute. Add meatballs between the onions and brown for one minute. (You might have to do this in two batches, depending on the size of your skillet.)
* Pour in jar of marinara; shake pan gently to mix. Put on lid and allow to simmer for 20 minutes.
* When ready to serve, cut each dinner roll in half. Place a wedge of Provolone on the top and bottom of each roll. Spoon a meatball with the sauce onto the bottom bun; top with the top bun.
Serve immediately

I forgot to take pictures of mine - but man - they were YUMMY! 

To go with our sandwiches I made homemade french fries using our NEW mini deep fryer! What an amazing gift!

I cut potatoes into strips.
I mixed flour, salt, garlic salt, onion salt and a little paprika - covered the potato wedges - put in deep fryer till crispy - and added some Lawry's Seasoning Salt - and VIOLA!  HOMEMADE FRENCH FRIES! 

YOU MUST TRY THIS! It was great! :)
